Can it take a booking during service?

That is the point of it. It does not get busy, and anything it cannot resolve is passed to a person with everything already written down.

Will it reply to reviews without us seeing?

No. It drafts, you approve. A restaurant reply in the wrong tone does more damage than a slow one.
